Ingredients (use organic ingredients where possible)
- 1 chilled ripe hass avocado
- 1 frozen, medium-sized, ripe banana
- 3.5 tablespoons of raw cacao powder
- 2 - 3 tablespoons of raw honey
- 1 teaspoons of fresh lemon juice
- 1 teaspoons of vanilla extract
- 2 tablespoons of chilled water
- 1 tiny pinch of sea salt
- 1 bar of chilled sugar free dark chocolate - to decorate
- This is an instant recipe, just keep a stock of sliced bananas in your freezer. If you only have a hand blender use unfrozen bananas, blend and then pop each serving into the freezer for an hour or two and remove 15 - 20 minutes before eating.
- Keep all the ingredients to hand as you blend in order to adjust the ratios slightly as the size of avocados and bananas varies so much. The perfect ratio in order to avoid the dish tasting too much of either is to use equal amounts of both.
- Blend the mousse ingredients together using your food processor - use a spatula to scrape down the sides until the mixture is smooth - it's as easy as that! You might want to add the cacao first before the other ingredients if you don't want to inhale a cloud of cacao when you remove the lid...
- Fill little cups with the mousse, sprinkle with grated chocolate and serve!
